paddy rice Also known as cargo rice or rough rice, paddy rice is harvested rice that has not yet been milled to remove the husk. Paddy rice is still a living grain that can be planted. Fifty pounds of paddy rice will yield about twenty-five pounds of white (milled and polished) rice.
