polished rice Polished rice is the general term often used for what most of us think of as white rice. It is rice that has had its outer bran layer and germ removed through mechanical or hand milling and has then been further polished to remove all traces of the bran. Polished rice has fewer minerals and vitamins and less fiber than brown rice, but it is quicker to cook, keeps better, and is more easily digestible.
