rice flakes Flattened grains of rice are eaten as snacks or breakfast food in many parts of the rice-eating world. The rice grains are heated or parboiled (as they are for southern Indian aval) before being rolled and flattened. Rice flakes keep well in a dry place; they absorb water and other flavors very well.
