white rice White rice is rice that has been milled to remove its bran. Much white rice is also polished to remove the last traces of bran. The endosperm, or inner layer, of all rice is white; thus, whatever color the bran layer, once a rice is milled and polished, it will be white or cream-colored. Milled parboiled rice tends to have a yellower color, though it is still sold as β€œwhite rice.”
