Finely ground nuts act as part of the flour, adding flavor and contributing bulk. But ground nuts cannot build the same structure as flour. Depending upon the amount of ground nuts in the recipe, a cake’s volume can be slightly less and its texture coarser. Grinding the nuts finely is very important in these cakes. (See nut grinders.)
