To pipe oval forms, rest the tip of the bag at a 45-degree angle to the surface; apply enough pressure for the mixture to flow slightly larger than the tip, moving slowly so that the diameter will increase to the desired width.
To pipe circular forms, hold the pastry bag at a 90-degree angle to the surface, about ยฝ inch above the surface; pipe out the mixture, raising the tip as necessary, to create the height and width of your circle.
