Large Chocolate Shavings or Long Cigarettes

Place the bar of chocolate in front of you and perpendicular to the edge of the counter; brace one end of the chocolate bar against your body. Grip a metal pastry scraper firmly in both hands and with the blade tilted toward you but almost parallel with the bar, scrape down the bar, pulling it forward toward yourself.

If the chocolate’s surface area is cool, you will get large shavings; if it’s slightly warm, the chocolate will curl into long, thin cigarettes. (See illustration.)
