Also called rice sticks, these come cut very narrow like vermicelli pasta or wider and flatter like tagliatelle. They are rehydrated in hot water and then used in stir-fries and soups. They have a much chewier texture than fresh rice noodles, which makes them work well in some stir-fried dishes.
