Fish Sauce

Nam pla or fish sauce is the run-off from salted anchovies or squid. The finest varieties come from Thailand or Vietnam: Three Crab brand is one of the best for salads and sauces, while Boy and Squid brands are good all-rounders for cooking. Refrigerate after opening.
