Fragrance is one of the most important aspects of Asian cooking, whether it is the simple aroma of shallots and ginger being stir-fried in oil or the complex aromas of cooking out a curry paste. In either case, the aroma will become more integrated and the raw ingredients you are frying will smell more cooked as they release their fragrance.
