Oil for Frying

So long as it is not burnt or too highly flavoured, used oil should be strained into a container and reserved for further use. Remember that it will last only a few days as oils quickly turn rancid once they have been heated. Waste oil should always be put into a sealed container (an empty peanut butter jar, for example) and deposited in the rubbish bin. Never pour oil down the sink and pollute the environment.
