When preparing prawns, remove the dark vein (actually the alimentary tract) to avoid grittiness in the finished dish. The easiest way to do this is to hook it out with a bamboo skewer. To butterfly prawns for quick and even cooking in a stir-fry, simply make a shallow cut along the back of each prawn.
