Although delicious, fresh shiitakes are not a substitute for the dried: the texture, quality and intensity of flavour of the dried mushrooms is unsurpassed. Dried shiitakes need to be rinsed and reconstituted by soaking in warm water for about 20 minutes; the stalks should always be removed as they remain hard and indigestible.
