2. Ramen Noodles

Available both fresh and dried, these noodles are crafted from wheat flour, salt, and water. Some brands contain kansui, an alkaline ingredient, in the dough, giving the noodles more elasticity (their trademark chewiness) and making them less absorbent in soups.
