Low-temperature cooking is defined by the accuracy achieved in the cooking stage. ‘Stirred water’ is the most stable way to transfer temperature with extreme accuracy. Immersion circulators consist of a controlled heating element and a simple water stirrer. The best units are very simple to use, with up and down buttons for changing the temperature, the ability to toggle between Celsius and Fahrenheit while the unit is on, and a simple timer to assist forgetful cooks.
