A thicker fleshed chili, this is used in Thailand’s “southern curries.” In Vietnam, it’s often sliced thin and served as a table condiment. Somewhat sweet and sour in flavor, it could be characterized as medium-hot. These chilies are uncommon outside of Thailand. They are about 3 cm. long, thin fleshed, and possess extraordinary heat. Long chilies can be substituted. Thai: prik leuang; Vietnamese: ớt
