As with spices, shop in markets that have a high turnover of chilies, such as a busy Asian market or Latin market. Chilies’ colors vary drastically between varieties, each supplier, and even within batches. This is due to their color when raw, drying techniques, and storage conditions. Yet they should be a homogeneous red color with some “orange-ish” patches (but mostly red).
