These are usually ⅙ or ⅛ inch in diameter, with one significant exception. The cao lâu noodles of Hội An in Central Vietnam are not only ⅛ inch thick and ¼ inch wide, but they also have a slightly yellow color, owing to the addition of ash to the dough that causes a desired chemical reaction.
