These dried rice noodles are sometimes called “rice ribbons.” They vary in size from ⅛- to ½-inch-wide flat strips. Used in soups and stir-fries, they are the iconic noodle of the classic Thai dish Pad Thai and are the dried noodle of choice to replace the fresh banh pho tuoi in the classic Vietnamese soup Phở Bò, beef noodle soup.
