This 1- to 3-inch variety comes in various shapes and is used for many purposes. Used as a common vegetable in a large range of dishes, the flesh is somewhat firmer than the common Western black eggplant. Since they have a higher skin to flesh ratio than American eggplant, they hold together well in stir-fries.
