Outside of Southeast Asia this part of the lotus plant is a rare find. If fresh can’t be found, rootlets packed in brine are a reasonable substitute. Although only about ¼ to ½ inch in diameter, they retain the unique interior pattern of the full-grown lotus root. They are primarily used for salads, such as the Vietnamese Gõi Ngó Sen.
