Chilies are the fruit of the plant. They begin as flower buds and hence have a floral aroma that is cherished by cooks across Southeast Asia. The freshest chilies have tender crowns that can be left on and incorporated into your recipes. Do, however, be careful as some larger chilies (fresnos and jalapenos) can possess very tough crowns that should be well trimmed.

Use a wire strainer to sift out spicy seeds.
