Kohlrabi and summer turnips will stay firm in the fridge for a week or even two. As with carrots and beetroot, any leaves are better removed or they will suck moisture from the veg. The leaves are edible and can be stir-fried or added to stews.
Prep
Only the youngest, smallest specimens have tender skins, so after washing kohlrabi and turnips you will probably need to peel them. First trim away any stems. (If the kohlrabi’s irregular skin is too much for your peeler, switch to a paring knife.)
