Farçous, Farsous (Rouergue, Aveyron) au maigre (for fast days), it is a small green fritter or beignet made with flour, eggs, onions and a large quantity of blette (Swiss chard), parsley and chives; au gras, with meat, it is more like a patty or hamburger containing sausage meat, onion, garlic, bread, eggs and a large quantity of herbs and spinach. Popular in the Aveyron.
