If you want to collect a salad of mixed greens, you can find an enormous variety of edible leaves in the vineyards, banks, verges and uncultivated ground of Languedoc. Bitter greens can be made more appetizing when eaten fresh and raw by introducing a sweetener such as tomatoes, cheese or eggs. Often olive oil or walnut oil, vinegar, garlic or onion are introduced to tame the heat. Some are also eaten cooked, with the bitterness blanched out.
