Creeping Bellflower raiponce (Campanula rapunculus) is sold on Carcassonne market. This plant is eaten before it flowers, when it turns out to be a very tall, blue campanula, lovely enough to pick and put in a vase. The white, crisp root is prized and eaten raw like a sweet crunchy radish, or can be cooked, while the leaves are eaten in a mixed salad.
