This is my favourite ingredient! I always have a reserve of several bottles in my cupboard to give as gifts. Pomegranate molasses is made by cooking pomegranate juice until it is reduced down to a dark, thick and sour syrup. I use it for salads, on meat and in stews. You can buy pomegranate molasses in Turkish supermarkets, but buyer beware: some brands are very sweet – too sweet for my taste.
