Most of the cookies in this book can be frozen either before or after baking.
Butter doughs can be frozen in discs and thawed overnight in the fridge, then rolled and cut out as usual.
You can freeze logs of cookie dough - let thaw on the counter for about 20 minutes, then cut out and bake (use a serrated knife and take care when cutting).
You can freeze already cut-out cookies directly on parchment-lined baking sheets and bake them from frozen.
Already baked cookies can also be frozen in airtight plastic containers. They keep for about three months in the freezer.
