Australia has two main species of scallop: commercial and saucer. Commercial scallops (previously called Tasmanian, king or sea scallops) have creamy-coloured flesh and are generally sold with their orange roe attached; the ridged, oval shell is a pale pink-red colour. Saucer scallops (previously called Queensland, white or mud scallops) have firmer, whiter flesh and are generally sold roe-off, often still attached to their almost round, smooth reddish-brown shell.
