Sea urchin roe Is available in small wooden or plastic boxes from good fishmongers and doesn’t require any trimming or preparation. Live sea urchins usually need to be pre-ordered. If you do buy a live sea urchin, chef Janni Kyritsis suggests this simple way of opening it: cut a small hole in the top, where the mouth is, then place the tips of a pair of pliers into the hole and, using two hands, pull the pliers apart to crack the shell open. This will reveal two sections, one with two pieces of roe and one with three pieces.
