Poutargue is the roe of grey mullet that has been washed in sea-water, dried, salted & pressed under a weight for 1-2 days. Rinsed & dried again, it becomes a poor man’s caviar. Pissala is a strong-tasting paste made from half grown sardines & anchovies preserved in brine.
