Opened in early 2001, Momo hums with life, bottles of more than 150 wines and an extensive menu of hot and cold tapas and raciones. With high-tech ventilation pipes beside chandeliers, 1950s red diner chairs and a steel-clad bar, Momo stands out for its design as well as for its Basque-style pintxos with a Castilian accent. ‘I saw what tapas bars were doing in San Sebastián and Valladolid and decided to do something different for Salamanca,’ says Miguel Reguera García, so he joined two partners to create Momo. Miguel is frank about having simply adapted some established recipes, but his strength lies in his taste for the best. ‘I like everything on my menu, but there are things we don’t do, such as Tortilla de patatas - you need one person dedicated to making it,’ he says. Instead, Momo’s menu features an abundance of cured meats, goat’s and sheep’s cheeses, leeks, peppers, courgettes and aubergines. From these, Miguel has created designer pintxos that are dressed to kill - minimally, of course.
