This is the richest, highest-quality commercial cream, with 36 to 40 percent milk fat. As heavy cream will double in volume when whipped, it is used primarily to make whipped cream. Unlike the more widely available ultra-pasteurized whipping cream, heavy cream is generally found only in fine grocery or specialty food stores or dairies.
