Also known as dragon fruit, these are very pretty. About 10cm/4in long, they have bright pink or yellow skin, covered with green-tipped scales. The flesh, which is white, and speckled with tiny, edible seeds, tastes rather like melon and the seeds add an interesting crunch. When ripe, pitayas should yield to gentle pressure. They are best eaten chilled. Cut the fruit in half, squeeze over a little lime juice and serve with a teaspoon to scoop out the flesh.
