Dyes of various colors and forms (liquid, powder, and gel-paste) are used to tint icings and frostings. Gel-paste food colorings come in a wider array of colors and are preferable to other forms of food coloring because they blend easier. A small amount of food coloring goes a long way, so be sure to start with just a drop or two to mix in before adding more.
