Salt is important in recipes both as a flavour-enhancer and a preservative. I use sea salt in all my recipes, except when I sear or grill meat; on those occasions I use kosher salt. Sea salt is made from the natural evaporation of sea water and is mined in large deposits. It comes in different grain sizes and colours. All sea salts have a wonderful natural aroma that does a beautiful job binding all the flavours in a recipe. And, contrary to popular culture, a good sea salt is not expensive.
