A spice with a sweet, perfumed flavor used throughout North Africa, the Middle East, and India. Actually there are two types: Green cardamom is a greenish-tan, coffee bean–size pod with small, fragrant black seeds inside; black cardamom is the size of a plum pit and has a smoky flavor. Green cardamom is available in the spice rack of almost any supermarket; black cardamom can be found in Indian markets.
