(also known as besan): A fine, aromatic flour made from roasted chickpeas. It has a tart, nutty, earthy flavor that’s unique in the world of cooking. Besan is used extensively in Indian barbecue to thicken and flavor marinades. It is also used in the south of France to make pancakes (socca, traditionally baked in a wood-fired oven) and in North Africa to make a sort of french fry.
