A root in the ginger family with a peppery, aromatic flavor (imagine the heat of ginger without the sweetness). It usually comes fresh or frozen in Asian markets. There’s also a powdered form from Indonesia that is sometimes sold by the name of laos. Fresh ginger mixed with freshly ground black pepper makes an acceptable substitute.
