These large sheets of paper-thin flat bread are served with grilled fare in Iraq, Iran, and the Caucasus Mountain republics of the former Soviet Union (Azerbaijan, Uzbekistan, Turkmenistan, etc.). Central Asians wrap grilled lamb in lavash the way Mexicans serve beef and pork in tortillas. Look for lavash at Middle Eastern markets and in many supermarkets. Dried lavash needs to be softened in water. Pita bread can be used as a substitute.
