Watching beans, peas and seeds sprout over a few days is quite magical. Fresh homegrown sprouts are also very nutritious, and an excellent inexpensive way of taking in fresh vitamins. The sprouting and germination process renders the beans digestible and all they need is time and water. Most pulses will sprout, but not split beans and split lentils, and it is a good idea to have 2 or 3 types growing at once. Sprouts can be used in pasta sauces, pilaffs, homemade burgers, stir-fries, stews and even sandwich fillings as well as in salads.
