Although traditionally associated with a good British breakfast, kippers make excellent suppers or light lunches, too. They are cured herrings, preserved further by cold smoking so they still need cooking before eating. You can buy whole or filleted kippers. Fillets have been boned, although fine bones may still be present. Look for plump, firm flesh with a good sheen.
There are three ways of cooking kippers. Whole or filleted kippers can be grilled, cooked by the jug method or in a microwave. To cook kippers in a microwave, place them on a lightly greased micro wave proof plate. Cover with microwave clingfilm and pierce, then cook on High (100%) for 3–5 minutes. Leave to stand for 3 minutes, then serve.
