Never dismiss hamburgers as mere junk food. When homemade with fresh accompaniments, such as blue cheese, capers and tomatoes, crispy lettuce and green peppers, burgers become a filling meal especially if you have minced the meat yourself

Mincing meat yourself is well worth the effort for inexpensive special occasion dishes, for memorable homemade burgers or if you want to use a different meat such as pork or lamb that is not available as ready prepared mince. You also know exactly what meat has been used and can choose lovely, lean juicy cuts. For best results only mince up meat just before cooking, because once minced it deteriorates rapidly.
