Meatballs are one of the natural things to make with minced meat, and, not surprisingly, they are popular around the world. In the Middle East, koftas are highly spiced meatballs shaped around skewers, and in India meatballs are often the only tender meat available. Although the spicy, exotic meatballs are usually made with lamb or mutton, you can also use beef and pork, or a combination. The meat should be top quality and more finely minced than for hamburgers. Meatballs can be round, oval-shaped or slightly flattened, but never very big.
