Pliable yet firm rubber spatulas are excellent for folding and blending light mixtures, such as whisked egg whites, and for scraping every bit of a mixture out of a bowl. Rubber spatulas should not be used in very hot mixtures or in hot pans, as the rubber will degrade. Wooden spatulas, on the other hand, don’t have this drawback and are suitable for mixing and folding all kinds of mixtures, as well as for doubling as a turner. Wooden spatulas come in a variety of shapes, both flat and curved, and may also be slotted.
