Long and narrow in shape to accommodate whole fish such as salmon, this has a perforated platform with handles so the fish can be lifted in and out of the poaching liquid without breaking up. Choose one made of tinned steel or tin-lined copper as other metals such as unlined copper could discolour acidulated poaching liquids. Squarer fish kettles are also available.
