Place this on a flat baking sheet to form a ‘tin’ for baking a pastry case. After baking, the ring, usually made of tinned steel with a rolled edge, is just lifted off. Only buy ones which are rigid and sturdy. Available in many sizes, these can be rectangular or round, with or without fluting inside.
