Shaped like a decorator’s scraper or a rectangle and sometimes with a handle along one side, this should be made of thin, stainless or carbon steel or plastic. Use for mixing and cutting pastry and bread doughs, for turning and lifting rolled-out pastry, for handling hot mixtures when making sweets, for scraping the worktop clean, and for folding in light mixtures.
