This is a stainless steel blade with 5 little holes in a line along the downward-curving end. Use to peel fine wisps of citrus skin or rind without taking off any of the bitter white pith.

Use a citrus zester to remove thin, delicate strips of rind that are ideal for flavouring or garnishing foods. Draw the sharp side down the skin.
