Handi

This cooking utensil is used to make many dum dishes. It is traditionally a copper pan with a neck that is narrower than the base, rather like a bigger version of a degchi. Decorated ovenproof handis made from terracotta are commonly available in Asian stores, and have become popular in the modern kitchen.
